at Koh Samui
STEAMED FISH
SAUCE for 1 person:
Fresh chili, finely chopped
Garlic, finely chopped
Coriander root, finely chopped
Sugar, ½ tbsp
1/2 piece Fresh lime
Fish sauce, 1 tbsp
Mix well.
INGREDIENTS:
Ginger, sliced
2 kaffir lime leaves
1 stalk of Chinese cabbage
Fish
METHOD:
Place lettuce leaves on a heatproof tray or plate. Arrange kaffir lime leaves on top of the lettuce.
Place fish on the kaffir lime leaves. Pour the prepared sauce over the fish.
Sprinkle thinly sliced ginger over the fish and sauce.
Pour a little water into the bottom of the steamer. Place the tray with the fish in the steamer.
Steam the fish for about 10 minutes or until the fish is cooked. Use a fork to poke the thickest part of the fish. If the fork can easily penetrate, the fish is done.
When the fish is cooked, remove from the steamer and serve immediately.
