PAD THAI SAUCE

INGREDIENTS:

  • 5 dried red pepper, pips removed, soaked in cold water. 

  • 2 cloves of shallots

  • 2 cloves of garlic

  • ½ Cup palm sugar

  • 1  Cup coconut milk

  • ½ Cup tamarind juice

  • 1  Cup water

  • ½ TBS salt.

METHOD for the sauce:

  Put dried chili, shallots and garlic in a blender with 1/2 cup water and blend until the ingredients are smooth.

  Put all the blended ingredients in a pot with coconut milk and boil until the coconut milk boils.

  When the coconut milk boils, add tamarind juice, palm sugar, salt and 1 cup water and boil until the sauce is thick.

  When the sauce is thick, turn off the gas.

PAD THAI

INGREDIENTS

  • Soak noodles in cold water for at least 30 minutes

  • Diced tofu

  • 1 egg

  • ½ tbsp dried shrimp

  • ½ tbsp pickled radish

  • Fresh bean sprouts, add as desired

  • Chinese chives

  • Ground roasted peanuts

  • Chili powder

  • 2 tbsp vegetable oil

  • Thinly sliced ​​meat

METHOD to cook pad thai:

  Add oil to the pan and stir-fry tofu until golden brown.
  Then add meat and stir-fry until chicken is cooked.
  Add pickled radish and dried shrimp and stir-fry until pickled radish changes color.
  Add egg and stir-fry until egg is cooked.
  Add noodles and Pad Thai sauce and stir-fry until sauce is dry.
  Add fresh bean sprouts and Chinese celery. If you like vegetables not cooked much, turn off the gas and mix. If you like vegetables cooked, continue to stir-fry until vegetables are cooked and turn off the gas.
  Serve with crushed peanuts, chili powder and fresh lime.

PAD SI-IEW CHICKEN

INGREDIENTS
for 1 person

  • Pad See Ew

  • 1 stalk of Chinese kale, cut into large pieces

  • 1 ear of baby corn, cut in half and then into pieces

  • 5 carrots, cut in half

  • Minced garlic

  • 1 egg

  • Thinly sliced ​​meat

SAUCE

  • 1 tbsp oyster sauce

  • ½ tbsp soy sauce

  • ½ tbsp dark soy sauce

  • ½ tbsp fish sauce

  • Brown sugar a quarter spoon

METHOD

  Heat a pan over high heat. Add a little oil and fry the garlic until fragrant.
  Add the chicken and cook until done. Then, add the egg and scramble it.
  Stir in the vegetables, noodles, and seasonings. Cook for about 1-2 minutes.
  Serve immediately with fresh lime and chili powder.
