Noodle dishes



  • 5 dried red pepper, pips removed, soaked in cold water. 

  • 2 cloves of shallots

  • 2 cloves of garlic

  • ½ Cup palm sugar

  • ½ Cup coconut milk

  • ½ Cup tamarind juice

  • 1 Cup water

  • ½ TBS salt.

METHOD for the sauce:

   In a blender add the red pepper, shallots and garlic together with 1/2 Cup of water and blend until smooth paste is formed.


   Add the paste to a pot together with the coconut milk and cook for 3 minutes.


Add the tamarind juice, palm sugar, salt and 1 cup of water and boil for 5 minutes.



  • 200 grams thinly sliced chicken breast

  • Thai rice noodles soaked in cold water for at least 30 minutes

  • Tofu cut into cubes

  • 1 egg

  • ½ TBS Dry shrimps

  • 1 TBS Pickled radish

  • Fresh bean sprouts

  • Garlic chives or garlic green leaves

  • Crushed peanuts

  • chilli powder

METHOD to cook pad thai:

 Add oil to a pan and add chicken and fry until cooked.


 Add pickled radish and dried baby shrimps


 Add egg and scramble until the egg is cooked


 Add the noodles,


 Add the pad thai sauce


 Add  fresh bean sprouts, garlic chives.


 Serve with crush peanuts, chilli powder and fresh lime.


for 1 person

  • Pad si-iew rice noodles

  • Kale

  • Baby corn

  • Carrot

  • Garlic cut very finely

  • 1 egg

  • Chicken breast sliced thinly


  • 1 TBS Oyster sauce

  • ½ TBS soya sauce

  • ½ TBS dark soya sauce

  • ½ TB light soya

  • ½ TBS fish sauce

  • ½ TBS sugar


 In a pan on high heat, add a little oil and fry the garlic.


 Add chicken and when cooked add the egg and scramble the egg.


 Add the vegetables and seasoning and fry together for about 1 – 2 minutes.


 Add the noodles and serve with fresh lime and chilli powder.
